It's so easy.
You just mash a banana in a bowl and whisk it together with two eggs. But, let's be honest, I usually add some vanilla and a touch of salt.
Dish up a ladle's worth of batter and throw it on a hot, cast iron pan, sizzling with lots of butta. Fry them on low heat for a few minutes till the top starts to cook, then flip. Cook other side for about a minute. Voila!
Add some tasty toppings and you'll be begging for one more.
I like mine with plain yogurt, strawberries, and maple syrup. David eats his with unsweetened whipped cream, strawberries, and powered sugar. Both super tasty!
The Basics:
- 1 Banana
- 2 Eggs
- Butter - for pan (not optional)
What I Add:
- Vanilla (optional)
- Salt (optional)
Makes around three large pancakes. I double the recipe for me and David so we don't have to fight :)
